Maple Nut Granola

Ingredients
3 cups oat flakes
1/4 cup whole wheat or buckwheat flour
1 tbsp ground cinnamon 
dash of salt
1 1/4 cup mixed raw nuts/seeds (we used sliced almonds, pumpkin seeds, cashews, walnuts & pecans) lightly chopped
1/4 cup avocado oil
2/3 cup maple syrup
1 tsp vanilla extract

Combine all ingredients in a large bowl. When fully coated,
spread evenly on a parchment covered sheet pan and bake at
325 F for about 20 minutes or until lightly browned. Let cool then transfer to a sealed container. 

Yellow Split Pea & Ham Soup

Ingredients
1 Ham bone, or smoked ham hock
2-4 cups dried, yellow split peas
4-8 cups water
1 carrot
1 onion
1 stalk celery
Olive oil
1 tbsp mustard powder
Fresh thyme, peppercorns, bay leaf,
salt & pepper to taste

Cut as much meat from the ham bone as possible into bite-sized cubes (these will be added to the soup later.) Fill a large stock pot with water and simmer ham bone with 2 or 3 sprigs of thyme, 2 bay leaves, tbsp peppercorns for minimum 2 hours. Continue to refill the pot with water as it reduces until the stock reaches a deep golden colour.
While the stock is cooking, chop carrot, onion and celery to equal sized pieces and simmer in olive oil in a large pot until soft & translucent. 
Once the stock has reached the desired colour/consistency, strain & pour 4-6 cups into the carrot, onion, celery pot. Add dried, yellow peas and bring to a gentle boil. Then simmer until the soup reaches your desired thickness. Add stock or water if it becomes too thick, or more peas if it remains too thin. Add ham cubes, mustard powder, salt/pepper to taste. Top the soup with buttered croutons before serving & enjoy!
